Apricot Brandy

Ingredients:
    Dried apricots, to fill a 1/2 qt jar
2    Sugar, up to 3 cups
1  pint  Bourbon

Directions:
1. Place apricots and sugar in a screw-top quart jar. Add bourbon and screw on lid tightly. Shake to dissolve sugar. Leave 5 to 7 days, inverting the jar twice daily (this means turning over...leave on top in morning, leave on bottom in evening).

2. Strain brandy into a decanter and store in refrigerator. Apricots can later be used as an ice cream topping, thrown into your favorite cookie or fruitcake batter, or use on top of an iced cake.
