Ingredients: 1
pound
Dried apricot,
finely chopped

cup
Granulated sugar 750
milliliters
Vodka,
divided

tablespoons
Apricot brandy Directions:
In a small saucepan, combine the apricots, sugar, and 1 cup of the vodka. Bring just to a simmer over medium-low heat, stirring occasionally to dissolve the sugar. Remove from the heat and cool completely. Pour into a large glass jar and add the remaining vodka and apricot brandy. Cover tightly and let stand in a cool place for 2 months. Pour the apricot mixture into a strainer set over a medium bowl. Let stand to drain well, at least 1 hour. (Some of the vodka will have soaked into the apricots.) Funnel the liqueur into an attractive bottle. Makes about 1 pint.
This deep-orange liqueur is marvelous alone or as an after-dinner drink, and tasty splashed into a glass of champagne. Don't let the drained apricots go to waste----they can be spooned over vanilla ice cream for a potent dessert.
