Dry Mead #1

2  Lbs  Orange Flower Honey
5  Lbs  California North County Area Wild Honey
1/4  Tsp  Irish Moss
2 1/2  Tsp  Yeast Nutrient
1  Bag  Oolong Tea
    Enough Water To Make 2.5 Gallons Total
    Wyeast Dry Mead Yeast

Boiled water. Added honey moss and nutrient to 1/2 gal water. Brought mixture to boil. Added tea and steeped 5 minutes. Removed tea bag and boiled 10 minutes more. Added to cooled water in primary let cool over night. Agitate vigorously about 5 minutes. Pitch yeast.

Sunday, September 1, 1996 Started my smak pack of Dry Mead Wyeast Monday, September 2, 1996 Add yeast directly into wort and stirred vigorously 5minutes. Covered and set in closet. Friday, September 13, 1996 Racked mead to secondary. It tastes wonderful! I will leave in Secondary until November. Next time, I think I would steep the tea in the water before adding the honey ect... 970514 This mead is a dark golden color. It reminds me of a Dry Sherry with a taste of walnut or avacado and citrus flavors. I use it in cooking in place of wine or sherry.
