Ginger Beer No. 2
0.50 lb Dried ginger (pounded green
1.00 ga Water
3.00 lb Sugar
0.25 pt Rice (white)
1. Put all ingredients into a clean jar. 2. Stir until sugar is
dissolved. 3. Cover jar and leave for two days. 4. On third day
strain through a thin muslin, and bottle. 5. Serve with cracked ice.
N.B. If only a mild flavour is required, lessen the amount of ginger.

One visitor wanted me to note the following: "As a chemist, I thought I should let you know that your root beer, Finnish Simi, and ginger beer recipes, while non-alcoholic in the sense that you have not added any alcohol, really are quite potent with alcohol. You see, those innocuous little yeast beasties you added are busy turning the sugar into alcohol. It's all quite natural, but it isn't non-alcoholic by any means."
