Hard Cider From Apple Juice

    3.00 c Apple juice concentrate
    2.00 qt Water
    0.25 c Warm water
    0.33 pk Yeast

Mix apple juice concentrate with the 2 quarts of water and put into a gallon jug. Dissolve the yeast in the 1/4 cup of warm water and put with the juice. Shake the jug well to mix. Cover the jug with saran wrap and fasten with rubber band but not too tightly. Because of the yeast the juice will ferment and the pressure must be allowed to escape. Allow the juice to sit at room temperature for 2 days. It would be a good idea to place the jug on a plate ot pie tin. On the third day put into the refrigerator to slow the fermentation. Drink as desired. The cider can be kept in the refrigerator for up to 2 weeks but will continue to ferment and will become drier; that is less sweet.
