Servings: 4
Categories: Apples / Fruits / Non-Alcoholic Beverages

Ingredients:
    2.50 c Water
    2.00 Tea bags
    0.50 c Fresh mint; chopped
    1.00 Lemon peel strip 2" x 1/2"
    2.00 c Apple juice or cider;
    --unsweetened
    1.00 tb Lemon juice
    4.00 Mint sprigs (optional)

Directions:
In a medium-size saucepan, bring the water to a boil over moderately high heat - about 3 minutes. Pour the boiling water into a warmed teapot and add the tea bags, mint and lemon peel; cover and steep until cool - about 20 minutes. Remove and discard the tea bags. Strain the tea into a 2-quart pitcher and stir in the apple juice and lemon juice. Fill four 12-ounce glasses with ice cubes and divide the apple-mint tea among them. Stir briskly and garnish each drink with a mint sprig, if you like.
