My No Egg Eggnog
milk, 2% lowfat
In a large 8 cup glass measuring cup, mix custard powder and sugar. Add milk a little at a time until the mixture is blended and not lumpy then add the rest. Cook in microwave on high until it boils and thickens. Add rum extract and nutmeg to taste and cool. Add milk to the desired thickness and serve chilled.
In the US, look for custard powder at British specialty markets. Bird's is a popular brand. To substitute, use instant vanilla pudding mix (substitute measure for measure).
