Orange-Mint Party Punch

2 1/4  cups  Sugar
1 1/4  cups  Fresh mint leaves, minced
3  cups  Orange juice
1 3/4  cups  Lemon juice
1  tablespoon  Grated orange peel
64  ounces  Ginger ale, chilled

Make a simple syrup for the punch base by combining sugar and water in heavy, large pot, such as a dutch oven. Bring to a boil and remove from heat. Add mint leaves, orange juice, lemon juice and orange peel. Cover and let flavors blend at least 1 hour. Strain and refrigerate, this base can be stored in a non-metal container in refrigerator for days. In punch bowl or large, non-metal pitcher, stir together equal portions of ginger ale and minted orange mixture. Serve over ice if desired.
