Oregon Fruit Fizz

12  ounces  Frozen grape juice concentrate, thawed
1  cup  Rhubarb/raspberry/cherry flavor concentrate
    Seltzer/soda water
    Fresh mint sprigs
    Rose petals or germanium flowers
3/4  cup  Granulated sugar
1/2  cup  Water
3  cups  Thin sliced rhubarb
3  cups  Raspberries
3  cups  Cherries

1. Combine white grape juice concentrate with one of the homemade flavor concentrates - rhubarb, raspberry or cherry. Refrigerate until ready to serve. To serve, place 1/4 cup of flavor concentrate mixture in 12-14 ounce tumbler. Add ice and 1 1/4 cup cold seltzer/ soda water. Garnish with a mint sprig or rose petal.

2. RHUBARB CONCENTRATE: Combine 3 cups of thinly sliced rhubarb, 1/2 cup water and 3/4 cup granulated sugar on a sauce pan and cook over medium heat about 20 minutes. Pour mixture through strainer, draining well. Discard pulp. Refrigerate until ready to use.

3. RASPBERRY CONCENTRATE: In a mixing bowl, with the back of a large spoon, crush 3 cups of raspberries. Dissolve 3/4 cup granulated sugar in 1/2 cup water. Combine crushed raspberries and sweetened water. Strain, draining pulp well. Discard pulp. Refrigerate until ready to use.

4. CHERRY CONCENTRATE: Pit and in a mixing bowl, with the back of a large spoon, crush cherries. DIssolve 1/2 cup granulated sugar in 1/ 2 cup water. Combine crushed cherries and sweetened water. Puree mixture in blender or food processor if desired, Refrigerate until ready to use.
