Oregon Fruit Fizz
Frozen grape juice concentrate,
Rhubarb/raspberry/cherry flavor concentrate
Fresh mint sprigs
Rose petals or germanium flowers
Thin sliced rhubarb
RHUBARB CONCENTRATE: Combine 3 cups of thinly sliced rhubarb, 1/2 cup water and 3/4 cup granulated sugar on a sauce pan and cook over medium heat about 20 minutes. Pour mixture through strainer, draining well. Discard pulp. Refrigerate until ready to use.
RASPBERRY CONCENTRATE: In a mixing bowl, with the back of a large spoon, crush 3 cups of raspberries. Dissolve 3/4 cup granulated sugar in 1/2 cup water. Combine crushed raspberries and sweetened water. Strain, draining pulp well. Discard pulp. Refrigerate until ready to use.
CHERRY CONCENTRATE: Pit and in a mixing bowl, with the back of a large spoon, crush cherries. DIssolve 1/2 cup granulated sugar in 1/ 2 cup water. Combine crushed cherries and sweetened water. Puree mixture in blender or food processor if desired, Refrigerate until ready to use.
Combine white grape juice concentrate with one of the homemade flavor concentrates - rhubarb, raspberry or cherry. Refrigerate until ready to serve. To serve, place 1/4 cup of flavor concentrate mixture in 12-14 ounce tumbler. Add ice and 1 1/4 cup cold seltzer/ soda water. Garnish with a mint sprig or rose petal.
