Pear Liqueur (Nancy Berry)

Ingredients:
6    fresh pears, or 12 dried
3  cups  vodka
1  cup  water
1    orange
6  whole  cloves
1  teaspoon  coriander seeds
1  teaspoon  ground cinnamon
3  whole  peppercorns, optional
4  cups  castor sugar

Directions:
If using fresh pears, wash, seed, stem and dice; if using dried pears, roughly dice. Place diced pears in a jar with the herbs and spices. Cut the zest off of the orange, leaving behind the pith. Peel orange, discarding pith, break into segments and cut into halves. Place the orange zest and segments in the jar, along with the vodka and water. Cover well and leave in a dark place for 14 days. Strain through a coarse sieve, then strain through a medium sieve and finally through a fine sieve. Add castor sugar and shake well until dissolved. Leave to clear in a cool, dark position for 7 to 10 days. Decant carefully into a clean bottle and discard any dregs. To improve color, add a little yellow food dye.
