Pina Colada Cream Liqueur

1  cup  Chopped fresh pineapple pieces
1/2  cup  Vodka
1 1/2  cups  Light rum, divided
1  cup  Canned cream of coconut
1/2  cup  Sweetened condensed milk
1/2  cup  Evaporated milk
2  teaspoons  Coconut extract

1. In a tightly closed Glass jar, steep the pineapple in the vodka and half the rum for 1 week. Strain, squeezing as much juice from the pineapple as possible.

2. Combine the pineapple liquid, remaining 1 cup rum and the rest of the ingredients in a pitcher. Pour the mixture, half at a time, into a blender. Cover and process on low speed until blended and smooth.

3. Serve the cream liqueur at once, over cracked ice or ice cubes. Or transfer the mixture to a tightly covered container and refrigerate for up to two weeks. Stir just before serving.
