South of the Border Hot Chocolate
0.67 c Sugar
2.00 ts Cinnamon, ground
1.00 c Milk
4.00 oz Unsweetened chocolate
7.00 c Milk
1.50 c Whipping cream; optional
0.25 c Sugar, powdered; optional
9.00 Cinnamon sticks; optional
Makes 1 cup per serving.
Combine sugar and ground cinnamon in large heavy saucepan; stir in
milk. Add chocolate; cook over medium heat, stirring constantly,
until chocolate melts. Stir in remaining milk and cook until
thoroughly heated, stirring constantly with wire whisk.
Optional whipped cream topping: beat whipping cream until foamy;
gradually add powdered sugar, beating until soft peaks form. Place
cinnamon sticks in individual cups, fill cups with hot chocolate, and
top each cup with a dollop of whipped cream.
