Calhoun's Blueberry Pie

Makes 6 servings

If you are watching calories and carbs, here's the prefect pie recipe. Just wait until you taste Calhoun Blend Mill's piecrust. You will throw away your shortening recipe.

1 package Calhoun Bend Mill's Cherry Oatmeal Crunch Mix
1/4 cup butter, melted
3/4 cup water, divided
4 tablespoons flour
4 cups blueberries, fresh or frozen, thawed
1 cup Splendaź
Whipping cream (optional)
  1. In an 8-inch pie plate, mix cherry oatmeal crunch mix with butter.
  2. Press mixture into the pie plate to form the crust. Bake for 10 minutes at 400°F in preheated oven.
  3. In a small bowl, combine 1/4 cup water with flour. Make a smooth paste.
  4. In a saucepan, add remaining water, 1 cup blueberries and Splenda. Bring to a full boil.
  5. Add the flour paste and stir until thickened.
  6. Remove saucepan from stove, add remaining blueberries and pour into baked pie shell.
  7. Chill. Serve with whipped cream, if desired.

Candied Yams

Makes 6 servings

Maybe candied yams are not on your diet because of the sugar. Most recipes use brown sugar or molasses. I have substituted Splenda for the sugar. This reduces 129 calories and 33g carbohydrates as compared to using white sugar. When you look at the ingredients you might say "Wow!" one and a half sticks of butter. I have yet to find a replacement for the taste of butter, so the butter stays. However, I have reduced fats some by using egg substitute and fat free milk.

1/2 cup egg substitute
3 yams, peeled, cooked, mashed, cooled
1 cup Splenda
3/4 cup butter, melted, divided
1/2 cup fat free milk
2 teaspoons vanilla
8 oz package Calhoun Bend Mill Apple Cinnamon Crisp Mix
1/2 cup pecans
1/2 cup raisins (optional)
  1. In a large bowl, combine yams, egg substitute and Splenda.
  2. Add 1/2-cup butter, milk and vanilla.
  3. Spray 10-inch casserole dish with vegetable spray.
  4. Pour mixture into casserole dish.
  5. In another bowl, combine apple cinnamon crisp mix with 1/4 cup butter, pecans, and if desired raisins.
  6. Spread this mixture on top of yam mixture.
  7. Bake for 30 minutes in a 350°F oven.
