Banana Macadamia Nut Cream Pie

Ingredients:
1/4  pound  filo
    butter, melted
1    egg yolk, beaten

-------filling---------
2  cups  milk
1/3  cup  flour
1/2  cup  sugar
2    eggs, separated, at room temperature
1  teaspoon  vanilla
2    bananas, ripe, up to 3
1/4  cup  macadamia nuts, chopped
1/4  cup  sugar

Directions:
TO ASSEMBLE: Bring the milk to a boil. In the top of a double boiler combine the flour and sugar over low heat. Slowly pour in the hot milk, stirring constantly with a wire whisk, until mixture boils and thickens. Remove from the heat. In a bowl, beat the egg yolks. Stirring constantly, slowly pour a little of the hot milk mixture into the yolks. Then stir the egg mixture into the hot milk mixture in the double boiler and cook about 2 minutes, stirring constantly. Remove from the heat and add vanilla. Slice the bananas and add to the custard, along with the macadamia nuts. Then beat the egg whites until stiff, gradually mixing in the 1/4 cup sugar. Gently fold the egg whites into the cooled custard. Follow the folding instructions for the Simple Round shape. Brush the top with beaten egg yolk. Bake in a preheated 400 oven until golden brown, about 25 minutes. Cool for 2 hours before cutting. Just before serving, return the pie to a hot oven for about 5 minutes to make the filo crispy again.
