Beef Enchiladas

Ingredients:
1  pound  ground beef
    garlic powder, to taste
    onion powder, to taste
    chili powder, to taste
    salt, to taste
10  ounces  enchilada sauce, or more if needed
10    corn tortillas
14 1/2  ounces  tomatoes, canned, Italian or Mexican style is best
1/2  cup  salsa, or more if needed
2  cups  Monterey jack cheese, grated
2 1/4  ounces  sliced black olives

Directions:
1. Brown ground beef. Add garlic powder, onion powder, chili powder, and salt to taste. Add about 1/4 cup of enchilada sauce (save the rest for later) and set aside.

2. Soften the tortillas either by heating them in a pan or warming them in the microwave. Pour rest of enchilada sauce in a bowl. Dip tortilla in sauce. In a 13x9 pan, place tortilla in pan, fill with a spoonful of meat, and roll it. Don't worry if it falls apart. Repeat until all 10 tortillas are filled with meat and placed in pan.

3. Pour rest of enchilada sauce, canned tomatoes, and salsa over rolled tortillas. Sprinkle with grated cheese and olives.

4. Bake in preheated 350F oven for 30 minutes or until cheese has melted and sauce is bubbly.
