Black Bottom Cupcakes

1/2  Lb  Cream Cheese
1  Tbls  Baking Soda
1    Egg, beaten
1  Tsp  Salt
1  Tbls  Sugar
2  Cups  Water
1/8  Tsp  Salt
2  Tbls  Vinegar
6  Ozs  Chocolate Chips
2/3  Cup  Salad Oil
3  Cups  Flour, sifted
2  Tsps  Vanilla
1/2  Cup  Cocoa Powder
2  Cups  Sugar

Combine the cream cheese, egg, sugar and salt and mix by hand. Stir in the chocolate bits. Set the mixture aside. Preheat oven to 350 degrees. Sift the flour, cocoa, sugar, soda and salt together. Add the water, oil, vinegar and vanilla. Beat well. At first it will appear to be un-mixable but just keep beating! Use muffin tins and paper liners, filling 1/2 to 3/4 full with the dark mixture (flour and cocoa). Drop one tablespoon of the cheese mixture on top of each. Bake for about 20 minutes. These freeze successfully. Yields 24 Serving
