Butter Pecan Ice Cream

    -----COOKIN' FROM SCRATCH-----
2  cups  Pecans, chopped
3  cans  Evaporated milk (14 1/2 oz)
2  packages  Instant vanilla pudding
    Mix (3 3/4 oz)
2 1/2  cups  Sugar
2  quarts  Milk to fill container
3  tablespoons  Butter, melted
1  teaspoon  Vanilla

Saute pecans in butter 5 minutes, then cool. Mix with other ingredients. Pour into freezer can and add milk to fill line. Freeze per manufacturer's instructions. Source: Jo Ann Tucker, "Cookin' From Scratch," Chico Extension Homemaker Club 1988.
