Cajun Popcorn

Ingredients:
1  cup  all-purpose flour
1  teaspoon  sugar
1  teaspoon  salt
1/2  teaspoon  onion powder
1/2  teaspoon  garlic powder
1/2  teaspoon  ground white pepper
1/2  teaspoon  ground black pepper
1/2  teaspoon  ground red pepper
1/2  teaspoon  dried thyme
1 1/2  cups  milk
2  large  eggs, lightly beaten
2  cups  vegetable oil
2  pounds  shrimp, baby gulf or crayfish, shelled
2  cups  dry bread crumbs, or cornmeal

Directions:
1. Stir together in a medium bowl flour, sugar, salt, onion powder, garlic powder, white pepper, black pepper, red pepper, and thyme.

2. Make a well in the center, Gradually pour into the well, whisking constantly, milk and eggs.

3. Let stand for 30 minutes. Meanwhile, heat oil to 365F in a deep fryer or deep, heavy pot.

4. Stir the shrimp into the batter. Remove with slotted spoon and lightly toss with breadcrumbs (or cornmeal).

5. Immediately add to the hot oil in batches and fry until crisp and lightly browned, 2 to 3 minutes. Remove with a slotted spoon to paper towels. Serve immediately.
