Carrot-Raisin Snack Cake

egg,
lightly beaten

shredded carrots 3/4
cup
raisins
nonstick cooking spray 1/2
cup
chopped walnuts
Directions:
Preheat oven to 350F. Combine first 3 ingredients in a bowl; stir with a whisk until blended. Add carrot and raisins; stir well. Pour into a 13 x 9 inch baking pan coated with cooking spray; sprinkle walnuts over batter. Bake at 350 oF for 35 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack.
