Chocolate Date Cake

Ingredients:
5  ea  Egg
3  c  Granulated sugar
1 1/2  c  Salad dressing
2  ts  Pure vanilla
2  c  All purpose flour
1  c  Unsweetened cocoa powder
    8-10 oz diced seedless
    -dates
1  sm  Pkg chocolate chip morsel
1/2  ts  Baking powder
1/2  ts  Baking soda
1/4  ts  Instant coffee powder
    -dissolved in 1/4 cup
    -boiling water
1  c  Buttermilk
    Powdered sugar or fresh
    -whipped cream

Directions:
Grease and flour a 10 inch tube pan or 2 9 x 5 x 3 inch loaf pans; set aside. In a large bowl with electric mixer on high speed, beat eggs, sugar, salad dressing and vanilla four minutes or until light and fluffy. Scrape sides of bowl. Sift together flour, cocoa, baking powder, baking soda and salt. Stir buttermilk into coffee mixture. On low speed, add flour mixture and coffee mixture alternately in thirds to egg mixture, beating until well-blended. Add 1/4 cup flour to dates and chocolate morsels and shake. Slowly add diced dates to batter. Gently fold chocolate morsels into batter. Pour batter into prepared pans. Bake in center rack in preheated oven at 325 degreed for 1 hour and 20 minutes or until a cake tester inserted in center comes out clean. Remove from oven. Cool in pans for 30 minutes and turn onto wire rack completely cooled. If desired, dust with powdered sugar or slice and serve with fresh sweetened whipped cream. This cake freezes well.
