Chocolate Nut Loaf
1.00 c Shortening
2.00 c Sugar
5.00 Eggs; well beaten
3.00 oz Baking chocolate; melted and
-cooled (3 squared)
1.00 c Pecans; chopped
1.00 ts Soda
1.00 c Buttermilk
2.50 c Cake flour; sifted
2.00 ts Vanilla extract
Cream shortening and sugar together until light and fluffy; add eggs
and mix well. Stir in chocolate and nuts. Dissolve soda in
buttermilk; add to creamed mixture alternately with flour, beating
well after each addition. Add vanilla. Bake in 2 greased 9x5x3"
loafpans at 325 degrees for 1 hour.
