Chocolate Oatmeal Pie

Ingredients:
1 1/2  c  all-purpose flour
1 1/2  ts  granulated sugar
3/4  ts  salt
1/2  c  cooking oil
2  tb  milk
3    eggs
1  c  granulated sugar
1  c  light corn syrup
2  tb  butter or margarine, melted
1  t  vanilla extract
1/4  t  salt
1/2  c  coconut flakes
1/2  c  rolled oats
1/2  c  semisweet chocolate chips

Directions:
Recipe by: Midwest Living, October 1994 Preheat oven to 350 degrees. For the crust, in a 9-inch pie plate, combine the flour, 1 1/2 teaspoons sugar and 3/4 teaspoon salt. In a small bowl, combine the oil and milk. Pour over the dry ingredients, stirring until all are moistened. Using your fingertips, press the pastry evenly over the bottom and up the sides of the pie plate. Set aside. For the filling, in a medium bowl, beat the eggs lightly until combined. Add the 1 cup sugar, syrup, butter, vanilla extract and salt. Beat until just combined. Stir in the coconut, rolled oats and chocolate chips. Pour into the crust. Bake for 50 to 55 minutes, or until the center appears almost set when you shake it. Cool on a wire rack. Store in the refrigerator. Penny Halsey (ATBN65B). By KKBG35A RUTH BURKHAR
