Chocolate Scotch Shortbread Cookies (xmas)
Unsweetened cocoa powder
Unsalted butter, cut into
Preheat oven to 300F. In food processor or with electric mixer
combine dry ingredients, butter chunks, and vanilla. Mix well until
dough holds together. By hand, work dough until smooth; shape into a
ball and flatten. Flour board and rolling pin. Roll dough evenly to
1/2-inch thickness. Cut cookies into desired shape with floured
cutter. Place on ungreased cookie sheet, prick in center with fork.
Bake 25-30 minutes or until firm. Do not overbake. Cool on wire
rack. Store in airtight container.
