Chocolate Topped Cheesecake
Chocolate Graham Cracker Crust,
broken into bits
Heat oven to 350F. Beat cream cheese, sugar and vanilla. Add eggs, one
at a time, mixing. Blend in melted white chocolate and pour over crust.
Bake 40 minutes, turn off oven and let cool inside. Cool compeltely,
chill for 4 hours. Heat heavy cream, butter and sugar in heavy saucepan
over med-high heat. Stir to dissolve sugar crystals and bring to boil.
Put chocoalte pieces into stainless steel bowl and pour cream mixture over
it. Let stand 2 minutes, stir until smooth. Cover sides and top of
cheesecake with ganache, smooth and chill 2 hours.
