Crockpot Beef Fajitas

Ingredients:
1 1/2  pounds  flank steak
1  cup  chopped onion
1    green pepper, cut into 1/2-inch pieces
1    jalapeno pepper, chopped
1  tablespoon  cilantro, chopped
2  cloves  garlic, minced
1  teaspoon  chili powder
1  teaspoon  ground cumin
1  teaspoon  ground coriander
1/2  teaspoon  salt
8  ounces  canned tomatoes, chopped
12    flour tortillas

Directions:
1. Cut steak into 6 portions. In crockpot combine meat, onion, green sweet pepper, jalapeno pepper, cilantro, garlic, chili powder, cumin, coriander and salt. Add tomatoes. Cover and cook on LOW for 8 to 10 hours or on HIGH 4 to 5 hours.

2. Remove meat from crockpot and shred. Return meat to crockpot and stir. To serve fajitas, spread meat mixture into flour tortillas and top with toppings (see notes) if desired. Roll up tortillas. (Pass the napkins!)

Your favorite toppings, such as: shredded Cheddar cheese, sour cream, hot sauce, guacomole, salsa, chopped green onions, tomatoes, etc. Low-carb: Skip the tortillas or use low-carb tortillas. These fajitas tasted good, but were too juicy for a tortilla.
