Dolmathes (Stuffed Grape Leaves)

Ingredients:
1  pound  ground beef
1    onion, chopped
1  bunch  green onions, chopped
1/2  bunch  parsley, chopped
1/2  cup  olive oil
16  ounces  chopped tomatoes, drained
1/2  cup  rice
1  tablespoon  dried mint flakes
1  tablespoon  dried dill
1  teaspoon  salt
1/2  teaspoon  pepper
1    egg, optional
    beef broth
50    grape leaves, canned
    lemon juice

Directions:
Mix first 12 ingredients and set aside. Rinse grape leaves. Place the grape leaves vein side up on work surface. Place 1 tablespoon meat mixture in center of grape leaves. Roll bottom of leaves over meat mixture, tuck in sides. Place finished rolls (lined up close together) in roasting pan that has been lined with extra leaves. Cover with beef broth and lemon juice to taste. Cover top completely with a layer of grape leaves. Cover pan with aluminum foil, bake at 350 degrees for about 45 minutes or until meat and rice are done. Serve hot or cold.
