Ellen Cleary's Frosted Fudgy Brownies
Frosted Fudgy Brownies
2 oz bitter chocolate 1/2 c butter 2 eggs 1 c sugar 1/2 c unsifted
flour 1 tsp vanilla 1/8 tsp salt 1 c chopped nuts
Frosting: 1 oz bitter chocolate 1 Tbsp butter, melted 1 c unsifted
powdered sugar 1 1/2 Tbsp water
Preheat oven to 350 degrees. Grease a 9 inch square pan.
Melt chocolate and butter. Beat eggs and sugar (hardly at all to get
fudgy brownies) with a whisk. Stir in chocolate mixture. Add flour,
vanilla and salt. Mix just until blended. Add nuts. Bake 20
minutes. Frost while warm.
Frosting: Melt chocolate and butter. Blend in powdered sugar and
water. Spread over brownies.
Chewy Fudge Brownies (Ellen Cleary)
1/4 c butter 3 sq bitter chocolate 1 1/2 c sugar 2 eggs 1/2 c unsifted
flour 1 tsp vanilla 2/3 c chopped pecans
Preheat oven to 325 degrees. Grease a 9 inch square pan.
Melt butter and chocolate over low heat. Pour into bowl. Add sugar
and eggs. Beat until well blended. Stir in flour and vanilla. Stir
in nuts. Bake 30 minutes, until a slight imprint remains when lightly
touched. Cool slightly in pan on rack. Cut into squares while still
