Fresh Apple Cake

1 1/2  cups  all-purpose flour
2  teaspoons  baking soda
1/2  teaspoon  salt
1  teaspoon  ground cinnamon
1  teaspoon  ground nutmeg
1/2  cup  margarine or butter, softened
1  cup  granulated sugar
2    eggs
4  cups  finely chopped, pared, apples
1  cup  all bran cereal
1  package  (3 oz.) cream cheese, softened
1  tablespoon  margarine or butter softened
1  teaspoon  vanilla flavoring
1 1/2  cups  sifted confectioner's sugar

Sift together flour, soda, salt, cinnamon, and nutmeg. Beat the 1/2 cup margarine and the granulated sugar. Beat in eggs. Stir in apples, cereal and flour mixture. Spread in greased 9x9x2 inch baking pan. Bake at 350 about 45 minutes or until done. To make frosting: Beat cream cheese, the 1 tablespoon margarine and vanilla. Gradually add confectioner's sugar, beating until smooth. If frosting is too thick, add 1 to 2 teaspoons milk. Spread on cooled cake. Yield 12 servings.
