Fresh Orange-pineapple-coconut "cream" Pie

Ingredients:
1  lg  eating orange
1    graham-cracker pie shell
    or 9-inch ready-to-fill
    commercial or homemade
1  c  cold water, divided
1  envelope  plain gelatin
1  c  water, boiling
1  c  unsweetened pineapple juice
    canned, not fresh or frozen
1  c  low-fat cottage cheese
    uncreamed
1/4  t  coconut flavoring (optional)
1  tb  orange peel, grated
    from orange
1  pk  instant vanilla pudding mix
    sz
2  tb  unsweetened dried coconut
    shredded

Directions:
Peel the orange and cut into chunks. Pick out seeds, if any, with the top of a sharp knife as you slice the orange. Arrange the orange chunks in a single layer in the bottom of the pie shell. Set aside. Meanwhile, put 1/4 cup cold water in the blender container and sprinkle on the gelatin. Wait 1 minute, until softened. Then add boiling water; cover and blend on high speed until gelatin dissolves (scrape blender jar). Add remaining 3/4 cup cold water, the pineapple juice, and cottage cheese; cover and blend smooth. Add coconut flavoring, if desired, grated orange peel, and pudding mix; cover and blend smooth. Mound mixture over orange chunks in pie shell. Sprinkle the top lightly with shredded coconut.
