fruit cocktail in light syrup
Preheat oven to 375deg F. Lightly grease an 8-in square baking
pan or 9-inch deep-dish pie plate.
Drain canned fruit, reserving 1/2 cup syrup. If the fruit is in
large pieces, cut it into pieces the size of cherries.
Put the flour, sugar, cornmeal, baking powder and cinnamon into
a bowl. Stir to mix well. In separate bowl lightly beat eggs.
stir them and the reserved fruit syrup into flour mixture.
Stir in chopped fruit.
Pour batter into prepared pan and bake 40-45 minutes until a pick
inserted near center comes out clean. Serve hot, warm or at
room temperature. Sprinkle with confectioners' sugar.
