Ginger Carrot Bars

applesauce,
at room temperature

vanilla
Directions:
Preheat oven at 375. Prepare a 8" x 8" baking pan lightly with cooking
spray and flour. In a mixing bowl, combine the orange juice and oats. Set
aside to soften 5 minutes. In a large bowl, stir together flour and baking
powder. In a medium bowl, combine carrots, maple syrup, egg white,
ginger, and vanilla. Stir in oats. Pour over the flour mixture and combine
until all the flour is moistened. Do not overmix. Bake for 20 minutes. Let
cool before slicing. Store tightly wrapped in plastic wrap or in a cookie
tin.
