Glorified Carrot Cake

450  g  Carrots, trimmed and peeled
1/3  l  Salad oil
350  g  Sugar
4    Eggs
250  g  Flour
2  ts  Baking powder
2  ts  Baking soda
2  ts  Cinnamon
1  t  Salt
70  g  Chopped pecans
    Pineapple cream cheese
225  g  Cream cheese, softened
100  g  Butter, softened
450  g  Confectioner's sugar
225  g  Crushed pineapple, well
1  t  Vanilla

Recipe by: Lou Ann Smith 1. Grease and flour 3 20 cm layer cake pans. 2. Grate carrots finely. 3. Mix oil and sugar in large bowl. Beat in eggs, one at a time. Sift toge 4. Turn into prepared cake pans. Bake in preheated 180 C degree oven for 5. Cool in pans for 10 minutes. Remove cake layers and cool thoroughly bef 6. Cut each layer in half, crosswise. Spread frosting between layers and o 1. Beat cream cheese with butter until smooth. 2. Add confectioner's sugar a little at a time, beating until very smooth 3. Blend in vanilla and drained pineapple. 4. Chill about 30 minutes, until of spreading consistency. Author's Notes: Submitted to a newspaper by Mrs. Jim Pontiero, Kimball, South Dakota. This cake freezes well either frosted or unfrosted. Difficulty : moderate. Precision : measure ingredients.
