Graham Cracker Cookies

Ingredients:
1  C  Flour
1/2  C  Whole Wheat Flour
2  Tbsp  Sugar
1/2  Tsp  Baking Soda
1/4  Tsp  Salt
1/4  Tsp  Cinnamon
1/4  C  Shortening
1  Tbsp  Butter
2  tbsp  Plus 1 Tsp Water
1  tbsp  Honey
1  tbsp  Molasses
1/2  tsp  Vanilla

Directions:
In mdeium bowl, combine flours, sugar, baking soda, salt, and cinnamon. Cut in shortening and butter until particles resemble small peas. In small bowl combine water, honey, molasses, and vanilla. Sprinkle over dry mixture, tossing with a fork until particles cling together and resemble small peas. Form into a ball and cover with plastic wrap. Refrigerate at least 1 hour. Divide dough in half. Roll out half the dough to 1/8" thickness between two sheets of wax paper. Cut with cookie cutters and prick with a fork. LIne microwave safe tray with wax paper. Arrange cookies aound edge of tray. Microwave at high 1 to 2 minutes or until dry and firm to the touch, rotating every 30 seconds. Cool on wire rack. Cookies will crisp as they cool. Repeat. Store in airtight container. Yield: 3 - 3 1/2 dozen.
