Gretchen's Cracker Cake

Ingredients:
    -----CAKE-----
1/2  c  Butter, softened
2  c  Sugar
4  lg  Eggs
1  c  All purpose flour
1  c  Cracker crumbs
1 1/2  ts  Baking powder
1  c  Milk
1  t  Lemon extract
1  c  Chopped pecans
    -----LEMON GLAZE-----
1  c  Sugar
1  tb  Cornstarch
1  t  Butter
1  c  Boiling water
1  lg  Egg yolk
1  t  Lemon juice
    -----GARNISH-----
    Lemon slices

Directions:
For the cake: cream butter, gradually add sugar, berating well. Add eggs, one at a time, beating well after each addition. Combine flour, cracker crumbs, baking powder; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix well after each addition. Stir in lemon extract and chopped pecans. Pour batter into two greased and floured 8 inch round cakepans. Bake at 350 for 25 minutes OR until a wooden pick inserted in center comes out clean. Cool in pans for 10 minutes; remove layers from pans and let cool completely. Spoon Lemon Glaze between layers and over top of cake. Garnish with lemon slices. For the Lemon Glaze: Combine sugar, cornstarch and butter in a heavy saucepan; mix well. Stir in boiling water; cook over low heat, stirring constantly, until thickened. Combine egg yolk and lemon juice; stir well. Gradually stir about one fourth of hot mixture into yolk; add yolk mixture to remaining hot mixture, stirring constantly.
