Hawaiian - Pineapple Carrot Cake

4  ounces  crushed pineapple
3/4  cup  oil
1 1/3  cups  sugar
1  teaspoon  vanilla
1  cup  coconut flakes
3  large  eggs
2 1/2  cups  sifted all-purpose flour
1  teaspoon  salt
3/4  teaspoon  ginger
1  teaspoon  baking powder
1/2  teaspoon  nutmeg
1  teaspoon  baking soda
1  teaspoon  cinnamon
2  cups  shredded carrots

---Lemon Mace Icing---
2  tablespoons  butter, softened
1 1/2  cups  powdered sugar, sifted
1  teaspoon  grated lemon peel
1/4  teaspoon  mace
1/4  cup  pineapple, well drained

1. Beat oil, sugar and vanilla together. Beat in eggs one at a time, beating well after each addition. Sift flour, salt, baking powder, soda, and spices together. Stir into creamed mixture, alternating with carrots and coconut. Fold in drained pineapple. Bake. Ice with Lemon Mace Icing.

2. Icing: Mix all ingredients well.
