Homemade Chocolate Pudding & Pie Filling

Ingredients:
1 1/2  cups  unsweetened cocoa powder, sifted
2  tablespoons  unsweetened cocoa powder, sifted
3 1/4  cups  granulated sugar
1 1/3  cups  cornstarch
1/2  teaspoon  salt

--To make pudding---
1  cup  Pudding mix
2 3/4  cups  Milk
2  tablespoons  Butter or margarine
1 1/2  teaspoons  Vanilla extract

Directions:
1. In a large bowl, combine all ingredients. Stire with a wire whisk until evenly distributed. Pour into a 6 cup container with a tight fitting lid. Seal container. Label with date and contents. Store in a cool, dry place. Use with 3-4 months. Makes about 6 cups Homemade Chocolate Pudding & Pie Filling.

2. To make pudding: In a saucepan, combine homemade chocolate pudding & pie filling with milk. Cook over low to medium heat, stirring, until the mixture thickens. Be careful to stir up from the bottom and edges so that the pudding does not scorch on the bottom. Remove from heat, stir in butter and vanilla extract. Pour into serving bowls. Serve warm, or cool slightly and refrigerate.
