Irish Soda Bread (McCormick)

Ingredients:
2 1/2  cups  all-purpose flour
1/2  cup  sugar
1 1/2  teaspoon  baking powder
1/2  teaspoon  baking soda
1  teaspoon  ground cinnamon, McCormick
1/2  teaspoon  salt
1/2  cup  raisins
1 1/4  cups  buttermilk
2    eggs
1/2  teaspoon  vanilla extract, McCormick

Directions:
1. Preheat oven to 350F. Lightly grease an 8 or 9-inch springform or round cake pan.

2. Combine flour, sugar, baking powder, baking soda, cinnamon and salt. Stir in raisins. Combine buttermilk, eggs and vanilla; stir into dry ingredients. Pour into prepared pan. Cut an X into the top to control cracking.

3. Bake 1 hour, or until toothpick inserted in center comes out clean. Cool in pan on wire rack 10 minutes.
