Jan's Festive Cake

3  cups  Flour
1  teaspoon  Baking soda
1  teaspoon  Salt
1  teaspoon  Cinnamon
2  cups  Sugar
3    Eggs, well beaten
1  teaspoon  Almond extract
1 1/2  cups  Oil
1  cup  Chopped almonds
2  cups  Bananas, firm ripe banana, chopped
8  ounces  crushed pineapple, undrained

Preheat oven to 325 degrees. Grease a tube pan. Blend flour, other dry ingredients and almonds. Add eggs, oil, extract, bananas and undrained pineapple. Mix well, by hand. DO NOT BEAT! Bake 1 hour 20 or 25 minutes, until it tests done. Let cool 10 mins before turning out. Frost w/ Cream Cheese Frosting.

From author: I have this feeling that a small bag of mini chocolate chips would be good added to this, but it might be gilding the lily...I've never tried it.
