Lemon-Pecan Pie

Ingredients:
1  9"  deep-dish pastry pie shell
4    eggs, lightly beaten
6  tb  butter, softened
1  c  light corn syrup
1/2  c  brown sugar, packed
2  ts  lemon rind, grated
1/4  c  lemon juice
3  tb  all-purpose flour
1 1/4  c  pecans, coarse chop
    whipped cream

Directions:
Bake pastry pie shell at 450F for 5-7 minutes. Remove from oven and cool crust completely. Combine eggs and next 6 ingredients; stir in pecans and pour into prepared crust. Bake at 350F for 40 minutes, shielding edges with strips of aluminum foil after 25 minutes to prevent excessive browning. Cool on a wire rack. Serve with whipped cream! Rita Taule By "Lloyd A.
