Lemon Cheese Cake
Vanilla wafer crumbs
3-oz pkg cream cheese
Scant lemon juice
Grated lemon zest
Mix vanilla wafer crumbs, melted butter, sugar and salt together. Can
use graham cracker crumbs instead of vanilla wafers. Press mixture
firmly on bottom and sides of buttered 8 inch pie plate. Blend cream
cheese and lemon juice, add eggs and sugar and beat until smooth.
Pout into vanilla wafer crust. Bake at 350 degree for 15-20 minutes
or until firm. Remove from oven and cool 5 minutes only. MIx sour
cream, grated lemon zest, (peel, no white), and sugar to make topping
and spread over pie filling. Bake 10 minutes longer. Cool, chill in
refrigerator 5 hours before serving.
