Lemon Dream Cake

3  c  Sifted cake flour
2  ts  Baking powder
1/4  ts  Salt
3/4  c  (1 1/2 stick) softened
1 1/2  c  Sugar
3  ea  Separated eggs
3  ts  Grated lemon rind
1  c  Milk
1/4  c  Fresh lemon juice
1/3  c  10X confectioners' sugar
    -----GINGER CREAM-----
1 1/2  c  Heavy cream
6  tb  10X sugar
2  ts  Fresh lemon juice
1 1/2  ts  Finely grated ginger root
    -OR 3/4 teaspoon ground

Preheat oven to 350 degrees. Grease three 8 x 1 1/2 inch round layer cake pans. Line bottoms with wax paper. Grease paper. Sift together flour, baking powder and salt onto wax paper. Reserve. Beat together butter and sugar in large bowl with electric mixer at high speed until fluffy. Beat in yolks and rind. Beat in dry ingredients alternately with milk, beginning and ending with flour mixture. Beat egg whites in medium size bowl until soft peaks form; fold in to batter. Pour batter into prepared pans. Bake in preheated oven for 20-25 minutes until wooden pick inserted into center comes out clean. Cool in pan 5 minutes. Invert onto wire racks; peel off paper; cool. SYRUP: Whisk lemon juice into 10X sugar in bowl until smooth. Brush sides and top od layers with syrup. GINGER CREAM: Combine cream, 10X sugar, juice and ginger in large bowl. Beat with electric mixer until stiff. Stack and fill cake layer with ginger cream. Refrigerate until ready to serve.
