light corn syrup
grated orange peel
Preheat oven to 325 F. Line 2 cookie sheets with parchment paper or foil.
Combine water, corn syrup and salt in small saucepan and bring to boil.
Add sugar and cook, stirring, over medium heat until dissolved. Transfer
to large bowl and stir in coconut. Split vanilla bean lengthwise. Scrape
out seeds (preserve pod) and add seeds to mixture with egg whites and
orange peel. Drop by level tablespoonfuls 1/2 inch apart on prepared
cookie sheets; shape into mounds. Bake 20 to 25 minutes, until pale
golden. Cool completely on sheets on wire racks, then peel off paper.
Makes 3 dozen.
