Melt-in-your-mouth Cookies

Author/Submitted by: Jo Anne Merrill
Servings: 144
Categories: Cookies / Desserts

Ingredients:
2  cups  margarine
1  cup  sugar
5  cups  all-purpose flour
2  teaspoons  vanilla extract
2  cups  pecans, chopped
1/4  teaspoon  salt
    confectioner's sugar

Directions:
1. In a mixing bowl, cream the margarine (or butter) and sugar; add flour, vanilla, pecans and salt. Mix well. Roll dough into 1-inch balls and place on ungreased cookie sheets. 2. Bake in preheated 325-degree oven for 17-20 minutes or until lightly browned. 3. Cool cookies slightly before rolling them in the confectioner's sugar. Yield: About 12 dozen.

These are soft, round cookies that look pretty since they are rolled in powdered sugar -- and they melt in your mouth.
