Miss Milton's Lovely Fudge Pie

Ingredients:
    m.carmain1 [melinda]
1/2  c  unsalted butter, softened
1/2  c  sugar
3  lg  eggs, separated
1/2  c  flour
2  oz  unsweetened chocolate
    melted and cooled
1  tb  vanilla
1/4  c  strawberry preserves
1  c  heavy whipping cream
    whipped until soft peaks
    form

Directions:
Preheat oven to 325. Butter and flour an 8" pie plate. In a mixing bowl, cream the butter with the sugar by hand or machine. Lightly beat the egg yolks and add to the butter-sugar mixture. Add the flour, chocolate and vanilla and mix well. In another bowl, beat the egg whites until stiff but not dry. Fold into batter. Spread about one-fourth of the batter evenly over the bottom of the pie pan. Spread the preserves on top, spreading not quite to the edges. Cover with the remaining batter. Bake until the surface of the pie feels firm but the texture feels soft, about 30 minutes. Do not overbake. Set the pie on a rack to cool to room temperature. Serve with whipped cream.
