Normandy Sand Cake

Ingredients:
1 1/2  c  Cake flour, sifter
1  t  Baking powder
1/8  ts  Nutmeg
1/2  c  Unsalted butter, softened
1  c  Sugar
3    Eggs
6  tb  Madeira
1/2  ts  Grated lemon peel

Directions:
Sift the flour, baking powder and nutmeg together. Cream butter and sugar until thick and creamy, about 5 minutes on medium speed. Add eggs, one at a time, beating well after each addition. Add the flour mixture alternately with the Madeira, beginning and ending with the flour mixture, and beating well after each addition. Stir in the lemon rind. Pour batter into a well greased and floured loaf pan. Bake in a pre heated 350 degree oven for 25-30 minutes or until cake tests done. Let cake cool in pan for 5 minutes, then turn out onto rack to cool completely. Dust with confectioners sugar before serving. This goes well with a Sabayon Sauce.
