Old-fashioned Egg-custard Pie

Ingredients:
    --- ----martha white's southern
    samp---------------
1    unbaked 9-inch pastry shell
4    eggs
2 1/4  c  milk
2/3  c  sugar
1  t  vanilla
1/4  t  salt
    nutmeg

Directions:
Preheat oven to 400. Bake prepared pastry shell for 5 minutes (do not prick). Cool on wire rack. Beat eggs in mixing bowl. Add milk, sugar, vanilla, and salt; blend well. Pour filling into pastry shell; sprinkle with nutmeg as desired. Bake for 15 minutes. Reduce oven temperature to 325.
