Old Fashioned Gingerbread
Butter (at room
(I added a tsp of cinnamon, too!)
Preheat oven to 350. bugger and lightly flour a 9 inch square pan.
Cream butter, add sugar and beat until very light and fluffy. Add
eggs, beat well. Add molasses and boiling water. blend well. mix
together dry ingredients, add and combine thoroughly. Bake for 35-45
minutes, until a toothpick comes out clean. cool in pan for about 5
minutes before turning out onto a plate.
Serve with sweetened whipped cream or applesauce. or butter & orange
marmalade. Or cream cheese.
This may be varied by adding as many raisins as your conscience will
allow, or may be used to make an upside down cake with canned peaches
or sliced, sauteed apples.
