Olympic Cookies

225  g  butter or margarine
335  g  brown sugar, firmly packed
1    egg
1 1/4  tsp  vanilla
210  g  oats, uncooked
225  g  flour
1  tsp  baking soda
1/2  tsp  salt
1  cup  M&Ms plain chocolate candies
75  g  raisins
75  g  chopped nuts
1/4  cup  coconut (optional)

1. Beat together butter and sugar until light and fluffy; blend in egg and vanilla. Add combined oats, flour, soda, and salt; mix well. Stir in remaining ingredients. 2. Drop dough by rounded teaspoonfuls onto ungreased cookie sheets about 7.5 cm apart. Press 2 to 3 additional candies into each cookie, if desired. 4. Bake at 180 C for 8-10 minutes, or until golden brown. 5. Cool on cookie sheets about 3 minutes; remove cookies to wire rack to cool thoroughly. Author's Notes: This recipe was printed in a local newspaper and was originally published as part of a 20th anniversary fund raising cook book for an elementary school.
