Orange-date Balls

Ingredients:
1  package  chopped dates, (16 ounces)
1/2  cup  margarine
1/3  cup  sugar
1    egg, well beaten
1/4  teaspoon  salt
2  teaspoons  grated orange peel
2  tablespoons  orange juice
1  teaspoon  vanilla
1/2  cup  chopped nuts
1/2  cup  graham cracker crumbs
4  cups  toasted whole wheat
    flake cereal
1 1/4  cups  finely chopped nuts

Directions:
1. Mix dates, margarine and sugar in 3-quart casserole. Cover tightly and microwave on high 4 minutes. 2. Stir in egg and salt. Cover tightly and microwave on medium-high (70%) 3 to 4 minutes or until slightly thickened. 3. Stir in orange peel, orange juice, vanilla, 1/2 cup nuts and the cracker crumbs. Let stand uncovered 10 minutes or until cool. 4. Stir in cereal. Shape into 1-inch balls, using buttered hands. Roll balls in finely chopped nuts. ABOUT 5 DOZEN BALLS; 75 CALORIES PER CANDY.
