Peanut Butter Chubbies
cold, cut into small pieces (2/3 stick)
smooth or chunky
peanut butter cup candies,
chopped (about 14 candies)
Whisk together thoroughly flour and salt.
Add and beat on low speed until the mixture just begins to hold together: butter, peanut butter, and vanilla.
Add and beat until well blended: peanut butter cups and peanuts.
Shape into 1-inch balls. Space about 1 1/4 inches apart on the baking sheet. Bake until faintly tinged with brown, 15 to 18 minutes; rotate the sheet halfway through baking for even browning. Remove the sheet to a rack and let stand until the cookies are completely cool and firm; do not attempt to move the cookies beforehand, as they will be too crumbly.
Position a rack in the center of the oven. Preheat the' oven to 350F. Grease a very large cookie sheet.
These intensely flavored peanut butter shortbread cookies are tender almost to the point of being crumbly. Their distinctive and appealing taste comes from the addition of peanut butter cups to the batter.
